## Description
This recipe was graciously provided by a friend, Alex. Spanakopita is a Greek pie with feta and spinach, but this spin on the traditional dish favours bite-sized rolls, which makes a much more casual (and addictive) eating experience.

>We use puff pastry in this recipe for simplicity and to save time, but swap to filo pastry for a more traditional approach.
Serve either as a side, family-style, or as a tapas with white or orange wine.

## Ingredients
Makes 24 small rolls
- [[Pastry]], puff, one roll
- [[Spinach]], frozen, 120g
- [[Onions]], one small white
- [[Garlic]], three cloves
- [[Oregano]]
- [[Dill]]
- [[Feta Cheese]], 200g
- [[Mozzarella]], 50g
- [[Sesame Seeds]]
- [[Eggs]], one, separated into white and yolk
- [[Milk]]

## Method
1. Preheat the oven to 180 degrees Celsius, 360 degrees Fahrenheit.
2. Finely dice onion and mince the garlic.
3. Fry both in olive oil on a medium heat until translucent and fragrant, about 10 minutes.
4. Add spinach, herbs, a splash of water and salt & pepper and fry until the water has evaporated. Let cool.
5. Put the mixture in a bowl. Add crumbled feta, mozzarella and egg white and mix well.
6. Spread the mixture over the pastry sheet and roll it up, cutting it into the desired size as you go.
7. In a bowl, whisk the egg yolk and a small amount of milk together. Using a brush (or with your hands), brush the top of the bites with the egg wash and sprinkle with sesame seeds.
8. Bake for 30 minutes and don't be tempted to take it out earlier!
9. Enjoy with either white wine, raki/ouzo, or a smooth brandy.
